The Malvazija Amfora is the showpiece of the eco-certified winery Kabola. The wine is made according to an ancient process of winemaking in clay amphorae in combination with oak barrels and aging in the bottle. It is a unique white wine with enormous aging potential.

Winery: Kabola
Region: Istria
Variety: Istarska Malvazija
Vintage: 2019
Volume: 0.75 l
Taste: This wine has a beautiful straw yellow color with a golden shine. It is crystal clear and full of flavor. The bouquet opens with notes of quince compote, followed by dry fern, star anise, vanilla and spices. This wine is dry, partly warm and soft, while retaining a beautiful freshness, mild tannins, excellent minerality and a full body. It is a wonderfully balanced wine with an intense taste and a long finish. Harmonious and tasty with notes of butter, ripe peach and bitter almond in the aftertaste.
Serve with: It is a very gastronomic wine that truly goes with everything from a culinary point of view because it is so unimaginably aromatic. But, as winemaker Marino Markezic himself says: “you don't have to eat anything with the wine, you can just eat the wine itself”. But if there really is something to be mentioned, then the combination with a fried scorpion fish is an amazing recommendation.
Serving temperature: 12-14 degrees Celsius
Alcohol percentage: 13%
Vinification: The grapes are picked by hand in September and only the best grapes from the best positions are selected for this wine. The stems are separated from the grapes, which then go unpressed into clay amphorae. These are 2.20 meters deep and are buried in the ground behind the winery. The amphoras come from Georgia where this way of winemaking has its origin.
The skin is therefore included during the fermentation in the amphorae and the grapes remain in it for six months.
In March, the grapes are then pumped directly into a special press where the wine is carefully pressed from the grapes. The skins are then separated from the wine, which is pumped into large 4000 liter oak barrels to mature for another year.
Once the wine has been bottled, the wine matures for at least another year in the bottle before it is released on the market.
Extra information: Malvazija Amfora is a super culinary white wine that is best served in a Burgundy glass.
Because it is a wine of very high quality, it is also ideal for aging. This is quite unique for a white wine.
