Edivo Winery produces Coral win, coral wine or underwater wine, wines that are matured in bottles at the bottom of the sea. Edivo is the only producer in all of Croatia that is allowed to mature wine in amphorae at the bottom of the sea.
They do this at a secret location near the Pleješac peninsula on an old sunken fishing boat that has been lying on the seabed for over 30 years. They place the wine bottles and amphorae on it at a depth of 18 to 25 meters for a period of two years.
During this maturation period, marine life such as coral and shellfish grows onto the bottles and amphorae, giving them a unique appearance.
The vibrations of the sea current and the constant temperature under water from 14-16 degrees Celsius year-round, all benefit the maturing process which creates a unique wine.
