Dingač is undisputedly the most recognized wine in Croatia. The Navis Mysterium line from Edivo winery is particularly special because it is made three times. This special 'base wine' is the same wine as the wine used for the famous 'Coral Wines' that are matured at the bottom of the sea.
Winery: Edivo
Region: Peljesac, Dalmatia
Grape: Plavac Mali (literally: Little Blue)
Year: 2015
Taste: This purple-ruby red wine has a spicy nose with green pepper, ripe plums and currants. The wine has beautiful acids and the dark fruit, especially the ripe plums, are reflected in the taste with secondary aromas of dark chocolate, cinnamon and cedar wood. The taste lingers for a long time and, as befits a real Dingač, this sturdy boy has quite a lot of ripe tannin. Serve with: Pašticada (beef stew), Lamb, grilled red meat with rich sauces and matured hard cheeses.
Ideal serving temperature: 18 degrees Celsius.
Type of wine: Premium quality red wine.
Vinification details: The base wine is made in stainless steel tanks for a few months. Then the wine goes into Slavonian oak barrels for a year. Then the wines mature further in the bottle. This Navis Mysterium is made three times with three completely different results, matured in the bottle in the cellar (like this wine), in the bottle at the bottom of the sea and in an amphora at the bottom of the sea.
Content: 0.75 l
Alcohol percentage: 15.5 % vol.
Additional information: The grapes for this wine come from two protected regions on the Peljesac peninsula; Dingač and Postup.
