Winemaker Ivan Velikanović is the only winemaker in all of Croatia who makes wine from Dornfelder. They added this grape variety especially for him to the list of permitted grape varieties. He achieves amazing results because the grapes on the hills of Pleševica get a lot more sun than in Germany.
Region: Plešivica (uplands)
Grape: Dornfelder, Cabernet Mitos and Portugieser in the ratio: 85/10/5
Taste: the almost purple color of this wine is already extremely intense and inviting. And that is the scent too. The dominant scents of red fruit pop towards you. Those lush fruit flavors of blackberries and cherries also stick to your mouth. The sturdy body, fine acids and super soft tannin together with the small touch of vanilla make this wine particularly pleasant.
Serve with: This wine fits well with white meat dishes, young cheeses, pastas and risottos.
Ideal serving temperature: 16 degrees Celsius
Production method: The grapes are separated from the stems after pressing. The grapes of all three grape varieties have had their first fermentation with shell in the same stainless steel tank for 7 to 10 days. Then the grapes were pressed. The second controlled fermentation also took place in stainless steel tanks at a temperature of 22 degrees Celsius. Subsequently, 15 percent of the wine has wood aging for six months in barriques of slavonic oak. Then a blend was made of it. Then the wine matured for 6 months in the bottle.
